Poussin (coquelet) is a butcher term for a young chicken, by slaughter the poussin is less than 28 days old and weight usually 400-450gr. The weight must not exceed 750gr. In the United States of America, poussin is an alternative name for a small-sized (cross-breed) chicken called Rock Cornish game hen, developed in the late 1950s. This little chicken is twice as old ant twice as large as the typical British Poussin. |
