Rabbit

Rabbits are related to hares. Non-hunters easily get these two mixed up even though it is actually impossible to confuse them. A wild rabbit is the smallest European descendant of the hare. Hares have a reddish-brown coat with a whitish-brown undercoat. Wild rabbits have a muddy grey to bluish-grey coat with a grey undercoat. A hare has long ears with black tips, the ears being as long as the hare’s head. Wild rabbits have shorter ears tipped in grey-brown.

Wild rabbits have a refined, delicate light red flesh with a subtle flavour of game. Because they are considered pests, they may be hunted year round.
