Wild pigeon

Wild pigeons are a real delicacy – and farmers would rather see them in the pan than in their fields where they can do considerable damage. The most common wild pigeons in Europe are Wood Pigeons. In the Netherlands, this pigeon species is the only one hunted.

Habitat
Domestic pigeons have retained a certain characteristic of Wood Pigeons: they still build their nests not in trees but in the dark corners of buildings and walls.

Meat
The dark meat of wild pigeons is more compact and tenderer and has a more distinctive flavour and aroma than that of domestic pigeons.

Domestic pigeons are fattened and reach their ideal slaughter weight in 28 days. By then, they weigh between 300 and 600 grams. The younger the pigeon, the more tender and delicious its meat.
